I subscribe to Six Sister's Stuff menu plan and found this yummy recipe!
INGREDIENTS:
- 4 1/2 Tablespoons butter (divided and melted)
- 3 teaspoons lemon juice
- 1 1/2 pound salmon fillet
- 1 1/4 cup Italian bread crumbs
- 3/4 cup grated Parmesan cheese
- 1 lemon (zested)
- 3 teaspoons dried dill weed (or fresh)
DIRECTIONS:
- Preheat oven to 375 degrees F.
- Mix together 2 Tablespoons melted butter and lemon juice.
- Place salmon fillet (skin side down) on a baking sheet sprayed with nonstick cooking spray. Brush butter and lemon juice over the top.
- In a small bowl, mix together bread crumbs, Parmesan cheese, 3 teaspoons lemon zest, 1 Tablespoon butter, and dill. Press the bread crumb mixture over the salmon.
- Bake for 15-20 minutes, or until the salmon flakes easily with a fork. Serve warm.
