Tortellini con Beschiamella

1/4 cup butter (I used half this much)
2 Tbl flour
1/2 tsp salt
2 cups milk
dash nutmeg
1/2 cup deli ham cut into strips (I used frozen left over ham)
1 14-16 oz pkg of frozen cheese tortellini
Parmesan cheese

Directions: For sauce, in a saucepan over medium heat, melt butter. Add flour, salt, and nutmeg and stir until just bubbly. Slowly add milk. Over medium heat, bring to boil, stirring constantly. Boil for 1 min. and remove from heat. Add ham. Pour sauce over cooked tortellini and sprinkle with Parmesan cheese.

We love this so much, I doubled the recipe and we only have about 1 serving left over!

My boys really like the tortellini from Costco (not the frozen kind, the refrigerated kind) so maybe I will try this. I always hesitate trying new recipes but this just might be a winner. We'll see!

we ate this tonight for dinner and everyone loved it! the boys had seconds. that says something.
